Sustainability

Responsible hospitality, without compromising quality.

Our policy is simple: reduce the hotel’s environmental footprint, use resources more responsibly and support our local area, while always maintaining the level of comfort and service our guests expect.

Our policy

We believe a hotel can offer high-standard hospitality while operating with greater respect for the environment and the local community.

At Mon Signor, we work every day to avoid unnecessary water and electricity consumption. Our approach is based on careful operation, maintenance and practices that reduce waste without affecting guest comfort.

At the same time, wherever possible, we prioritise local products, local producers and partnerships that keep more of the value created by hospitality within Santorini and the local community.

Our garden is also part of our approach to sustainability. Today, more than 250 plants grow throughout the hotel, and we continue to expand and enrich the green spaces of Mon Signor.

For us, sustainability does not mean lower quality. It means more thoughtful choices, better resource management and responsible operations without lowering our standards in cleanliness, food safety, service or the overall stay experience.

Our priorities

Five principles that guide our daily operation.

We do not treat sustainability as a separate service. We consider it part of how the hotel operates.

01 · Water

Responsible water use

Our goal is to reduce unnecessary consumption, identify losses early and operate our equipment as efficiently as possible.

02 · Energy

Electricity efficiency

We pursue better energy management through responsible use, maintenance and avoiding consumption when it does not add real value to the guest experience.

03 · Local

Local products and partnerships

We place emphasis on Greek and local products and, where possible, work with producers and businesses from the area.

04 · Community

Supporting the local community

We want our presence to have a positive local impact through local partnerships, experience recommendations and choices that strengthen Santorini’s economy and identity.

05 · Garden

More than 250 plants

Our garden is an active part of our sustainability effort. We already have more than 250 plants throughout the hotel, and we continue to expand the garden and green spaces of Mon Signor.

Together with our guests

Small everyday choices can make a difference.

During your stay, you can take part in our effort for more responsible hospitality. We do not ask you to compromise your comfort; we simply invite you to help us avoid unnecessary waste.

  • Use the available recycling points and separate recyclable materials whenever possible.
  • Switch off lights and electrical devices when they are not needed or when you leave the room.
  • Avoid leaving water running unnecessarily during showers or everyday bathroom use.
  • If you notice a leak or another source of resource waste, please let reception know so we can act promptly.
Participation is voluntary and part of a shared effort to protect Santorini’s environment without reducing the standards of your stay.
